Ingredients:
- 250g whole wheat flour
- 120g rolled oats
- 120ml organic honey
- 120ml coconut oil
- 2 large eggs
- 5g vanilla extract
- Pinch of salt (optional)
Instructions:
- Preheat oven to 190°C (fan-assisted) or 200°C (conventional). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together:
- 250g whole wheat flour
- 120g rolled oats
- Pinch of salt (optional)
- In a large bowl, whisk until smooth:
- 120ml organic honey
- 120ml coconut oil
- 2 large eggs
- 5g vanilla extract
- Gradually add dry ingredients to wet ingredients and mix until a dough forms.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 5cm space between cookies.
- Bake for 10-12 minutes or until lightly golden.
- Remove from oven and let cool on the baking sheet for 5 minutes.
- Transfer cookies to a wire rack to cool completely.
Tips:
- For chewier cookies, bake for 8-10 minutes.
- For crisper cookies, bake for 12-14 minutes.
- Add-ins like chopped nuts, seeds, or dried fruits enhance flavor and texture.
