Greek Yogurt and Honey Cheesecake Bars

Servings: 9-12 bars

Ingredients:

  • 240g Greek yogurt
  • 120ml organic honey
  • 60g granulated sugar
  • 120g graham cracker crumbs
  • 60g chopped walnuts
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 180°C (fan-assisted) or 190°C (conventional). Line an 18x18cm baking dish with parchment paper.
  2. In a medium bowl, whisk until smooth:
    • 240g Greek yogurt
    • 120ml organic honey
    • 60g granulated sugar
    • 1 tsp vanilla extract
    • 1/4 tsp salt
  3. Prepare the crust:
    • Mix 120g graham cracker crumbs and 30g melted unsalted butter until combined.
    • Press mixture into the prepared baking dish.
  4. Layer the cheesecake mixture over the crust.
  5. Sprinkle 60g chopped walnuts on top.
  6. Bake for 35-40 minutes or until edges are set and center is slightly jiggly.
  7. Cool completely in the baking dish.
  8. Refrigerate for at least 4 hours or overnight.
  9. Cut into bars and serve chilled.

Tips:

  • Use high-quality Greek yogurt for the best texture.
  • Adjust honey to taste for desired sweetness.
  • Add lemon zest or juice for extra flavor.
