Organic Honey and Oatmeal Cookies

Servings: 12-15 cookies

Ingredients:

  • 250g whole wheat flour
  • 120g rolled oats
  • 120ml organic honey
  • 120ml coconut oil
  • 2 large eggs
  • 5g vanilla extract
  • Pinch of salt (optional)

Instructions:

  1. Preheat oven to 190°C (fan-assisted) or 200°C (conventional). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together:
    • 250g whole wheat flour
    • 120g rolled oats
    • Pinch of salt (optional)
  3. In a large bowl, whisk until smooth:
    • 120ml organic honey
    • 120ml coconut oil
    • 2 large eggs
    • 5g vanilla extract
  4. Gradually add dry ingredients to wet ingredients and mix until a dough forms.
  5. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 5cm space between cookies.
  6. Bake for 10-12 minutes or until lightly golden.
  7. Remove from oven and let cool on the baking sheet for 5 minutes.
  8. Transfer cookies to a wire rack to cool completely.

Tips:

  • For chewier cookies, bake for 8-10 minutes.
  • For crisper cookies, bake for 12-14 minutes.
  • Add-ins like chopped nuts, seeds, or dried fruits enhance flavor and texture.
